Four courses, and the one this school is not

Every row below carries the figure that matters: not the contact hours, but the part of them your own hands get.

This is not a business course

It does not cover leases, costing, licensing, hiring, supplier contracts or menu pricing — and a person opening a café needs those more than they need latte art. We do not teach roasting, and we do not teach farming.

If what you actually need is how to run the business, a short course in coffee will not give it to you. The provincial SME office runs costing and licensing workshops, and we would rather say so before you book than after.

Three trainers and six students to a class. When a course has six, it is closed — we do not add a seventh and split the machine three ways.

One Day Intro

Who it is for
A visitor with one free day, or someone deciding whether to book the three-day.
Prerequisite
None
What it covers
  • — Grind and dose
  • — Pulling a shot, and tasting what you pulled
  • — Steaming milk, badly, on purpose

The honest bitOne hour is one hour. You will pull maybe fifteen shots. That is enough to find out whether you like this, and not enough to be a barista.

Espresso Foundation

Who it is for
The course most people book. A career changer starting from nothing, or a home user who wants to stop guessing.
Prerequisite
None
What it covers
  • — Grind and dose, and why the same recipe moves
  • — Extraction and tasting
  • — Milk texturing, and one free-poured pattern
  • — Machine cleaning, daily and weekly

The honest bitDay 2 is the hard one. Milk is where people decide they are bad at this. It is not a talent, it is about 200 jugs, and you will do 40 of them here.

Who it is for
Anyone who buys coffee for a living, or wants a vocabulary for what they are tasting.
Prerequisite
None — but it is the less useful course if what you want is a bar job.
What it covers
  • — Grind, ratio and water
  • — V60 and batch brew
  • — Cupping protocol, and the vocabulary that goes with it

Who it is for
Someone who intends to stand behind a bar in the next few months and be paid for it.
Prerequisite
Espresso Foundation, or demonstrable bar experience.
What it covers
  • — Everything in Foundation, at speed
  • — Workflow, and two-person bar choreography
  • — A timed service simulation
  • — Cleaning schedules, and who signs them off

The honest bitThe last day is a two-hour simulated rush and it is deliberately unpleasant. Better here than on your first shift.
